Storing Ginger in the Refrigerator

Many people store ginger at room temperature, for example in a fruit bowl. However, this does not appear to be the best way to store this seasoning. In fact, it is better to keep a stalk of fresh ginger in the refrigerator in a sealed freezer bag or in a paper bag. Storing it in the refrigerator will keep it good for about three weeks. We are talking about a piece of uncut and unpeeled ginger, though. If you cut and peel it in advance, the ginger won't last as long and some of the freshness and flavor will also disappear. 

Freezing ginger

Did you enthusiastically go ginger shopping at the supermarket or greengrocer and have too much left over? Then you can freeze the ginger in a sealed freezer bag. When you need it in a recipe or to make a nice cup of tea, you can take the ginger out of the freezer and grate off a piece. You might not think it, but it's very easy to peel frozen ginger, so you don't have to defrost it. You can store ginger in the freezer for about one year.
